Summer, with all its basking in the sun and running through sprinklers, is a glorious time indeed. It’s when we spend time outdoors, getting a little dirtier than normal and working up an appetite. And if you’re anything like us, that appetite normally calls for sweets! These treats are on the messy side, which is perfect, because with all that running around, you’re going to need a shower anyway.

Homemade Popsicles

homemade popsicles

On a hot summer day, few things are more refreshing than a popsicle. Cool and sweet, you can buy these treats at the store. But then you’re stuck with whatever flavors someone else created. When you make homemade popsicles, the flavor combinations are up to you! Want Strawberry-Pineapple? You can do it. Thinking of something a little more grownup, like Gin and Tonic Popsicles? That’ll work too!

Bacon S’mores

S’mores are the classic summer campfire treat – an ultra indulgent mix of gooey marshmallows and rich chocolate. But when you throw bacon into the mix, you take these ultra-messy handheld delights and turn them up a notch. The salty exterior heightens the chocolate and plays off the browned exterior of the marshmallow for a treat that’ll make you go yummmmmmmm!

Queen Victoria sponge

A classic accouterment to afternoon tea, the Queen Victoria sponge sandwiches raspberries and Jersey cream between two layers of sponge cake. Though the presentation can be lovely, slicing through the layers often ends in a delightfully sweet and indulgent mess!

Blueberry Cobbler

Sweet and juicy, this blueberry cobbler is bound to stain your teeth (if only just a little) and your fingers (if you decide to lick the bowl). The sweet blueberries are topped with a biscuits baked right on top, giving you perfect texture contrast.

Sour Cherry Sorbet

Feel like ice cream might weigh you down with all the milk and cream? Have no fear. Sorbet is your new best friend; especially this sour cherry flavored one that’s light and bright. Loaded with tangy flavor, it’s the kind of homemade treat that’ll wow your guests and your family. Every. Single. Time.

Caramel Drenched Flourless Chocolate Cake

Pull up your big girl panties. Screw on your serious man hat. This dessert is not for the timid. It’s in your face with rich chocolate goodness. The ultra-moist chocolate cake is smothered in caramel sauce and then topped with scoop, upon scoop of vanilla ice cream. Gaby, from What’s Gaby Cooking, added sparkler candles because it was her birthday. But we’d probably skip that stuff. It just gets in the way. Serve it unadorned with extra spoons and let everyone dig in!

Mini Ricotta + Parmesan Cheesecakes

Most cheesecake is served neatly sliced on a plate with the fork. This is not that cheesecake. It’s a handheld treat, baked in paper muffin cups and topped with a healthy dollop of runny jam. It’s smooth and creamy. It’s the kind of cheesecake that’s perfect for breakfast, they kind that’ll cause jam to run down your hands and your forearms. And it’s completely okay, because it’s that good.

Salted Caramel Chocolate Bars

Salted Caramel Chocolate Bars

Shortbread. Caramel. Chocolate. These are the kind of treat that invites you to throw caution to the wind. They’re extremely messy. Be warned. You might discover caramel slipping down your fingers and wrists. Just relish in the goodness.

Saltine Crack Ice Cream Sandwiches

Everyday saltines are nice. But when you slather them caramelized dark chocolate, something pretty epic happens. Then you wedge some thick vanilla ice cream between them and WOWZA! Just be warned, the ice cream has a tendency to get a mind of its own as you start eating.

Like a fruit-filled riff on canola, these puff pastry tarts are filled with a layer of cheesecake-like cream and sugar tossed blueberries. Sure, you could eat them with a fork. But where’s the fun in that? Pick it up. Eat it with your hands. Then lick your fingers. They’ll inevitably be dirty.

Coffee Cajeta Ice Cream

This is another treat that will help you beat the heat. Coffee-fueled and loaded with chocolate, this is the kind of homemade pick-me-up that will help you stay up to enjoy the entire evening!
